Meet the mother-to-be who took the leap to launch jacket potato and loaded fries food van in Northampton
Meet the mother-to-be who has taken the leap to launch a jacket potato and loaded fries food van in Northampton, as a means to support her growing family.
Erin Burdon is the founder and owner of Loaded & Baked, which she runs with the support of her sister Alisha, and the venture opened for the first time on January 5.
“I bought a food van a few months before I found out I was pregnant,” Erin told the Chronicle & Echo. “I launched it so when I’m on maternity leave, I can support my baby. I’m still working full-time as well as running the van on Mondays and Fridays.”
Erin previously worked in multiple kitchens as a chef and built her experience this way. Now she works in a factory as part of her parents’ business and this has given her the freedom to explore this new venture.

Loaded & Baked specialises in jacket potatoes and loaded fries, topped with chilli con carne and barbecue pulled pork. There are a variety of rotating specials, which have included chicken curry, fish and chips and nachos in recent weeks, and Erin is proud that everything is homemade and fresh.
Located outside the unit of her parents’ business Crane Plastics in Harborough Road, Erin hopes to expand to more locations in the future but is focusing on establishing herself in Brixworth first. It is open from 6pm until 8pm on Mondays and from midday until 2pm on Fridays.
“It’s all been very positive and people have said they are the best jacket potatoes they have ever tried,” said Erin. “You can feed a family of four for £25 on our menu. Everything is homemade and I know exactly what’s in everything when it comes to allergens.”
Erin was 31 weeks pregnant at the time of speaking to this newspaper and her focus is to get her name out there as much as possible before she considers attempting to expand the business.
