A Northampton man's protein-packed cookies from his homegrown bakery business will debut in retailers across the country this September.

Kevin Boyce, from Wootton, says he has spent two years in the kitchen perfecting the recipes for a vegan cookie loaded with five grams of plant-based protein.

Now, his company - The Bicep Bakery - is ready to roll out across the UK this Autumn after earning a partnership deal with WHSmiths.

Kevin says he was given the chance to focus on his business during the lockdown after the pandemic what would have been a summer of visits tradeshows and conventions to demo his cookies.

He said: "It's taken a lot of back-of-office work to get the recipes right, and that was before lockdown. Then, just as lockdown started, I was meant to be exhibiting at the Birmingham National Exhibition Centre, which obviously didn't happen.

"It meant I had a load of product on my hands I needed to sell somewhere. It led to me pitching to all sorts of retailers and businesses.

Now, Kevin is ready to debut his biscuits in more than 200 stores across the country after striking a deal with WHSmith. It could even see it for sale in Northampton's own train station.

Kevin, who used to sell chemistry lab equipment and is a long-time member of Northampton's Unit 22 CrossFit gym, founded his business while searching for protein treat since nothing else in stores came up to scratch.

Kevin said: "The really hard part was developing a recipe that was vegan and made with protein but still tasted good, which is something other bakeries forget about.

"I'm really excited for September. The goal really is to be everywhere."
