A Mexican restaurant and an American diner are both due to open in Northampton next month.
Chiquito and Coast 2 Coast are both set to open at the Sixfields lesiure complex towards the end of June, it has been confirmed.
They will replace Red Hot Buffet which was destroyed by a huge fire on December 18, 2013.
The Restaurant Group, which own the Mexican and American diner chain, had said the two new eateries would open in July.
The date has now been moved forward to June.
A spokesman told the Chronicle & Echo yesterday: “The restaurants should be opening towards the end of June.”
The company began work on site last year following the huge blaze in 2013 which saw the popular Red Hot Buffet burn to the ground.
Large crowds of people were evacuated from Cineworld when the fire broke out at the restaurant and watched as the flames took hold.
The site has since been cleared to make way for the new restaurants which will employ around 60 staff.
A recruitment process is currently taking place for employees.
Chiquito is the UK’s largest Tex-Mex restaurant chain, with more than 70 sites and 100,000 customers each week.
It is set to serve breakfast, lunch and dinner including burgers, tacos, fajitas, tex-mex and steaks.
Coast 2 Coast is an American-themed restaurant and bar with its name based on the Lincoln Highway that spans the United States.
On the menu is pizza, pasta, calzone, specials, grills and thrills and burgers.
The restaurants will be open between 9am and 11pm and would include an outdoor terrace area.
