Not a dry eye in the house at design show

Northampton optometrist, Brian Tompkins, has taken to the stage at a national exhibition to show how healthy eating can help protect your eyes.

Mr Tompkins, a former Masterchef finalist and owner of Tompkins, Knight & Son Optometrists in Kingsley Road, Northampton, appeared at Grand Designs Live, held at Excel in London.

Brian’s menu included dishes such as ‘Bloody Shamblyopia’ – a starter containing celeriac, chillies, beetroot and ginger – a fish course called Ocean Mega3 and flaming double vision for dessert, which featured blueberries, pineapple and vodka.

He said: “General vision can benefit from proper eating and I was delighted to have the opportunity to showcase these recipes at Grand Designs Live.

“Nutrition is a major part in eye health as well as general health so cooking with ingredients that are known to be good for the eye can help with conditions such as macular degeneration and dry eye and sufferers have already said they would be trying out the recipes.”
