Take a sneak peek inside fine dining restaurant in Northampton as it reopens today

Choose from one to nine courses at the newly relocated restaurant at Delapré Abbey which is smashing the fine dining stigma

Set within the historic grounds of Delapré Abbey AA-rosette winning Hibiscus reopened for their soft launch last night (Tuesday) to their loyal customers and the media.

Hibiscus, which used to be based in the Royal & Derngate, officially reopens to the public today (Wednesday) offering customers a selection from one to a nine course meal.

The Tom Hewer Catering-owned restaurant is in the Billiard Room, which is currently used by The Orangery Café during the day for afternoon teas but the room will be transformed in the evening to become Hibiscus.

Hibiscus restaurant manager Kieran McNamara said menus vary from à la carte to their tasting menus.

"Our menus cater for people who are maybe on a time schedule who want to come in for a main course," Kieran said.

"Or, if they would like to relax and enjoy the night we actually offer a seven or a nine course tasting menu so it ranges. You could be here for an hour to about four hours and really make an evening of it.

"We want to be that place that offers good, quality food in Northampton but actually without the stigma around it where people think it's going to be really expensive."

The restaurant can seat up to 40 people, with extra chairs and tables outside for summer evenings.

A la carte main courses start from £18, which includes the winter vegetable tarte tatin with stuffed shallot and candy beetroot, ranging to the most expensive on the menu being the beef sirloin with textures of celeriac, smoked onion and oyster at £27.

The seven course tasting menu starts at £55 while the nine course tasting menu starts at £70.

In May last year, Hibiscus and its executive chef, Sam Squires, was awarded an AA Rosette by a panel of judges for its 'accomplished cooking' after only being open for 18 months.

Sam took the plunge and moved to the Ritz in London where he became a commis chef at 17 years old.

After five years building his way up the ranks Sam left as a chef de partie before a two-year stint working on a Disney cruise ship in three-star Michelin-starred restaurant Remy, and luxury yachts with Silversea cruises.

Hibiscus, which first opened on September 2, 2017, takes bookings between Wednesday and Saturday, from 7pm to 11pm.
