Pancake making takes a battering

IT'S Pancake Day tomorrow – but there are fears few people know how to mix and flip the traditional pre-Lent feast.

Supermarket chain Morrisons is worried people are taking the festival with a pinch of salt, having discovered more than half the county don't know how to make a pancake, which generally involves getting out the mixing bowls and whisks, buying some flour, eggs and butter and mixing along with whatever other tasty ingredients come to mind.

Its survey of shoppers showed one million county residents – half of Northamptonshire's population – said they did not have time to make one and 810,000 have never made them before.

Morrisons spokesman Sandra Clegg said: "Pancakes are one of the easiest dishes to make.

"They can be healthy, nutritious, and with an endless variety of fillings are the perfect basis for a breakfast, lunch or dinner.

"They've been part of our culinary and social history for half a millennia and it would be a shame if making them was consigned to the history books."

In the spirit of keeping the tradition alive, the Evening Telegraph has been finding out your favourite pancake treats – plus giving you a recipe so you won't miss out on Pancake Day.

Wellingborough chef Phil Brown said the pancake was traditionally a good way to use up any spare ingredients before fasting for Lent.

He said: "My favourite pancakes are the ones with savoury toppings and one of my favourites – as a born and bred Yorkshireman – is a mincemeat stew, although my wife always goes for the sweet option.

"Our 10-year-old daughter Harriet takes after both of us – she likes both the sweet and savoury options.

"I make pancakes every year. They're a lot of fun to make and it's an annual tradition and of course they're very tasty!"
