Cookery duo set to open Northampton pub after quarter of a million pound revamp

Two chefs are set to reopen an 18-century pub in Northampton following a £250,000 refurbishment.

Business partners, Joe Buckley of Harrington and Nick Bonner of East Haddon are revamping the Red Lion in Yardley Hastings, which will open doors to the public in the first week of December.

The duo, who also own a chain of successful pubs in Northamptonshire, including the Tollemarch Arms in Harrington, say the menu will play host to a mix of worldwide cuisines.

Mr Buckley said: “The menu has been heavily inspired Nick’s travels. There is a big Italian influence, as well as American and Korean.”

The pair, who studied at Northampton College, are looking to take on two apprentices when the pub opens in December, both in the kitchen and front-of-house.

He added: “My first apprentice was taken on eight years ago, he still works for me and had just been promoted to head chef, so we are all about progression.”
